Ambrosia Fruit Salad

Hi friends!  Every once in awhile, a recipe that I’ve made often comes to mind, and then I realize I’ve never shared it with you.  Ambrosia fruit salad is something that we had every Easter growing up.  I don’t know why, but it was as standard as the deviled eggs and the ham.  So I guess that’s why I always start to crave it this time of year.  Ambrosia is kinda tropical and very refreshing–a welcome change to all of the heavy comfort food we usually eat throughout the winter.  And it’s super-easy to throw together!  So I’m sharing it with you because, who knows?  It may be something you had as a kid, too, but never made yourself.  It’s easy to forget about all these oldies-but-goodies.

Ambrosia Fruit Salad

1 c. sour cream
1 c. sweetened coconut
1 1/2 c. mini marshmallows
1 can pineapple chunks, drained
1 can mandarin oranges, drained

Drain the cans of fruit really well first.  (I pour them into a colander and let them sit there awhile)

When the fruit is sufficiently drained, just mix all of the ingredients together and refrigerate before serving. That’s it!

    I have used this recipe for – literally – decades. I’m now in my 70s and started making it back in my teen years. When making for a large group – family reunion or church function – I will use the marshmallows. But when doing it for just my family or small gatherings I don’t, as I don’t like them. I often exchange the pineapple for fresh berries or sliced bananas, then add chopped nuts. I am so glad to see someone keeping the recipe alive and circulating.
