Hey there! So, have you ever had one of those weeks (months) when you can’t seem to cross anything off the list? Nothing is going right for me lately. Projects are failing left and right (or never getting off the ground) and I’m distracted by the mundane yet necessary. Snow days aren’t helping. I’d love nothing more than to take the day off whenever my kids are home so we could frolic and revel in our unexpected freedom together; but, it seems I’m not built that way. At least not at this stage in our lives. But then again, wouldn’t it be just the way God works for me to take that time, assuage my guilt over lists without checkmarks with cupcakes and snowmen instead, and then feel better for it afterwards? At least in the motherhood column? Hmmmm. Maybe I’ll get another chance tomorrow.
There was one thing that turned out for me today: these mini lunchbox pizzas! Anything mini is worth trying, right? If nothing else, for the cuteness factor. But these were tasty, easy AND cute, making them blog-worthy in my book.
3 flour tortillas
1/2 c. to 3/4 c. pizza sauce
12 slices pepperoni
1/2 c. shredded mozzarella
1/2 tsp. Italian seasoning
Spray a muffin tin with non-stick spray. Set aside.
Using an empty tin can, cut 4 circles out of each tortilla. If the can won’t cut completely through the tortilla, just use kitchen shears to finish the job.
Place each tortilla round snugly in the bottom of a muffin cup. The sides will curve up slightly.
Place a scant tablespoon of pizza sauce (depending on how saucy you like your pizza) in each cup.
Place one slice pepperoni on top of the pizza sauce.
Sprinkle with cheese. Place the Italian seasoning in your palm and put a pinch of it on top of the cheese.
Bake at 425 for about 10 minutes or until the cheese is bubbly.
These mini pizzas are the perfect recipe for kids to make themselves. Give them an apron and let them get to work! They’ll be so proud.
