Peppermint Hot Chocolate

Have you ever made hot chocolate with cocoa and milk instead of from a packet? I can’t begin to tell you the difference in taste! Homemade hot chocolate is incredible…a real treat. But surprisingly, there isn’t that much sugar in it! If you haven’t tried making hot chocolate from scratch yet, give it a go, and then take it one step further by adding a little peppermint extract to it. I, for one, may never look back.

Peppermint Hot Chocolate
(makes 2 servings)
4 T. unsweetened cocoa powder
2 T. sugar
2 pinches of salt
2 c. milk
1/4 tsp. vanilla
1/8 tsp. peppermint extract

Heat 4 T. of the milk in a saucepan on low and stir in the cocoa, sugar and salt. Keep stirring until everything has dissolved and you’ve basically just got melted chocolate.
Pour in the rest of the milk, then add the vanilla and peppermint extracts.
Turn the heat up to medium. Stir constantly until it’s smooth and hot all the way through.
Top with whipped cream and crushed candy canes.
