Broccoli Casserole

Hi there! So we are still mopping up leftovers in this house after Thanksgiving, how about you? It occurred to me that I’ve never shared our family’s recipe for broccoli cheese casserole with you guys. How is that possible? This is a favorite holiday side dish in our family, and in fact, all of us kids (and grandkids) just about got up and left the table the one year my mom decided not to include it. I’m kidding. But seriously, it’s that good.

Broccoli Cheese Casserole
2 c. cottage cheese
4 eggs, beaten
1/2 lb. Velveeta cheese, cubed
1 tsp. salt
2 pkgs frozen broccoli
3/4 c. butter or margarine
6 T. flour

In medium skillet, melt butter and add flour. Cook until thickened, stirring often.
In a large bowl, mix cottage cheese, eggs and salt. Add butter mixture, then Velveeta and broccoli.
Stir to combine.
Transfer to a large rectangular buttered baking dish. You can refrigerate at this stage for a day or two or until you’re ready to bake it.
Bake at 375 for 35-40 minutes and let sit for 5-10 minutes before serving.
