So as much as I don’t want to admit this, it’s almost time for comfort food again, so I thought I’d share this old-school favorite today. You can alter this recipe to make it healthier by using low-fat products and fresh chicken…but, alas, we prefer the full-fat, processed-chicken variety.
Pillsbury Chicken Squares
Makes 4 bundles
1 tube of Pillsbury crescent rolls
1 small can of chicken breast meat
3 oz. cream cheese, room temperature
2 T. unsalted butter, softened
2 T. milk
1 T. diced onion
1/4 tsp. salt
1/8 tsp. pepper
Preheat the oven to 350 degrees.
Soften the cream cheese by microwaving it for 30 seconds or so, then stir in the butter, milk, onion, salt and pepper.
Drain the chicken and add it to the cream cheese mixture.
Unroll the crescent dough and, instead of separating it into triangles, just separate it into 4 rectangles and use your fingers to seal the perforations a bit. Place the rectangles of dough on a cookie sheet.
Divide the filling evenly among the 4 rectangles.
For each bundle, pull the 4 corners together and pinch.
Bake for about 20 minutes or until golden brown.
