Recipe of the Week: Peaches & Cream Oatmeal

Hold on to your hats, ’cause I’ve got a good one for you today! You may have gleaned that I like peaches. I wax poetic about peaches all summer long and can’t wait for August when we can trek to our favorite orchard to get some. Then we eat ’em and go back for more. It’s hard to improve upon eating one straight-up, but I’m always looking for different ways to enjoy them, too.

So yesterday, I sadly realized that we were down to 3 peaches, and they may be the last of the season. So I chopped one up to have with my oatmeal, and then just decided to put them in my oatmeal instead. The result was…heavenly.

Peaches & Cream Oatmeal
1/2 c. quick-cooking oats
1 T. brown sugar
1/4 tsp. cinnamon
pinch of salt
1/3 c. milk
1 small peach, chopped
1 to 2 T. cream or half-and-half

Combine the first 5 ingredients and microwave on high for 1 1/2 to 2 minutes. Stir in chopped peaches and add a dash of cream or half-and-half. Devour.

This is my favorite way to eat oatmeal to date. It may even top this:


Strawberry Nutella Oatmeal

Oh, they’re both good. It’s like choosing between my children.
