It’s the last day of school around these parts! Where did the year go? We are excited to start the summer, and have all sorts of fun things planned. Right now, however, we’re gearing up for our soon-to-be-4-year-old’s birthday on Monday and our eldest’s first ballet recital this weekend. Maybe after that, the weather will warm up again and we can get in some summer-y activities. Hope you’re enjoying your day…
Here’s an elegant way to dress up an ordinary salad, and it didn’t take long at all. We went to the farmer’s market this weekend and got some good steaks for the grill. They didn’t need much to accompany them…just some potatoes and a green salad…but I had some leftover goat cheese in the fridge so I decided to make something special for our salads. Oooooooo, we’re gonna be doing this more often…it was good.
Mixed Green Salad with Goat Cheese Toppers
Slice a log of goat cheese into as many discs as you think you’ll need. We made 2 per salad. Flatten them slightly with your palm.
Beat one egg in a bowl, and dip the cheese discs in it.
Toss some panko or regular bread crumbs with some salt and pepper to taste, and coat the egg-washed discs in the crumbs.
Brush lightly with olive oil.
Lay on a foil-lined tray (for easy clean up) under the broiler for about 5 minutes. Watch so they don’t burn! Serve warm on top of salad greens tossed with simple balsamic dressing (seen below).
1/3 c. olive oil
3 T. balsamic vinegar
1 healthy splash of orange juice
salt and pepper to taste
I promise you, you’ll want to keep some goat cheese on hand after you try these. They’re perfect for impromptu summer cookouts, and seem so fancy, you’ll be able to impress all your friends.
