Greetings and happy-almost-Friday to you! Normally I try to post my Recipe of the Week on Wednesdays, but today is our oldest’s 6th birthday, so I’ve been busy preparing for her celebration. We don’t do birthdays too super-big around here, but there are some elements that MUST be present: a homemade birthday cake, balloons at breakfast, and of course, gifts. So anyway, this post is a day late, but not a dollar short. I hope it’s a recipe that’s right on the money for all of you other busy parents. It’s quick to prepare, makes a lot (for freezing leftovers), and tastes great.
Slow Cooker Chicken Cacciatore
Place 2 lbs. boneless, skinless chicken thighs in the slow cooker and top with:
1 jar marinara (I use the Victoria brand)
1/2 c. white wine
1 can tomato paste (although I’ve omitted this when I forgot to buy some and it was still delicious, just thinner)
2 tsp. sugar
1 tsp. basil
8 oz. quartered mushrooms
1 red pepper, chopped
Cook on low 8-9 hours. Serve over penne.
Now I’m off to bake a birthday cake. She wants three layers…wish me luck!
