I never used to make myself homemade oatmeal before we had kids; mornings were so rushed and it always seemed to take too much time. One great thing about being a SAHM is the luxury of long breakfasts and lazy mornings. It’s really not my style to lay around in PJs until noon, but it’s nice to have the option, especially when we don’t have anywhere to be and it’s a freezing cold February morning. We make oatmeal for Liv almost every morning, but when we have time, I like to concoct different flavors. I just follow the directions on the canister using oatmeal, milk and salt, then add in the extra stuff. Here are some of our favorites:
Raisin Spice*–raisins, dash of vanilla, pinch of nutmeg and 1/4 tsp. cinnamon
Apple Pie w/ Walnuts–diced apples, chopped walnuts, dash of vanilla and 1/4 tsp. cinnamon
Cranberry Coconut–dried cranberries, slivered almonds, dried coconut, dash of vanilla, dash of almond extract
Cherry Vanilla–dried tart cherries, dash of vanilla, dash of almond extract
Blueberry Morning–either dried or fresh blueberries, dash of vanilla, scant amount of lemon zest
*I sprinkle all of these with sugar to taste.
Here’s a timesaver: Make extra and scoop it into single-serving-sized containers for breakfast all week. Just add a little more milk before reheating in the microwave, then stir. Yum! And so much better for you than the instant pre-flavored variety which has a lot of extra sugar.
