Here’s a fun recipe to try on a fall day. The base of the recipe is just a spice cake mix, but the topping and presentation are what make it Home Made Modern-ish. And for toddlers who find caramel apples a bit too intimidating to eat, these are a great substitute with all the same flavors. Super easy, super fast, super-big hit!
Unlike a lot of the recipes I share with you, though, these don’t freeze well because the tops are so sticky. Since it makes 2 dozen, they’re nice for parties, bake sales or playgroups. Also, it’s kind of tough to find caramels unless it’s autumn, so hold off making these seasonal treats until the weather turns cooler.
Caramel Apple Cupcakes
1 spice cake mix
1-2 tart apples, peeled and chopped
3 T. milk
1 c. chopped pecans
Prepare spice cake mix according to directions. Fold in apple.
Fill paper-lined muffin tin with batter and bake at 350 degrees for 20 minutes.
Meanwhile, melt caramels and milk in saucepan over low heat, stirring frequently. Spread this over each cupcake and top with pecans.
Insert popsicle stick into each cupcake.
Yield: 24 cupcakes
