
Hello there, lovelies. I don’t know about where you are, but the weather here in Ohio has got me feeling blue. I’m officially ready for spring. Ready for daffodils, warm-ish breezes, and the sound of birds. So in that vein, I’m pulling out another springtime goody from the HMM vault, originally posted in April 2010: Easter basket cupcakes. These things are just plain happy. They’re pretty, delicious, easy, and fun to make with the kiddos.
We made these cupcakes a few years ago with my friend, Becky, and her two kids, Libby and Katie. They are a tradition in Becky’s family, and we were thrilled to share it with her and her girls. Too cute, I must say. And very kid-friendly. Just bake the cupcake flavor of your choice, frost them with colored frosting (I’m partial to vanilla for these because it goes so well with the coconut), then dip in coconut that’s been mixed with food coloring. Add a few jelly beans and a pipe cleaner for the basket’s handle and voila!
Hope the prospect of making these for Easter (which is super-early this year!) cheers you up if you’re feeling blue, too. Until next time…
